Before reaching Essaouira, your first stop is a visit to a local women’s cooperative dedicated to the traditional extraction of Argan oil. What is Argan Oil?

Argan oil is extracted from the kernels of the Argan tree — a species that grows almost exclusively in southwestern Morocco. One of the rarest and most valuable oils in the world, prized for both culinary and cosmetic uses. The extraction process is entirely done by hand.

What You Will See

Watch the women crack the hard Argan nuts by hand with two stones. The kernels are then ground on a traditional stone mill and the oil pressed out by hand. You will have the opportunity to taste fresh culinary Argan oil and amlou — a traditional Moroccan paste of Argan oil, almonds, and honey — spread on fresh bread.

You arrive in Essaouira around midday — the perfect time to explore the medina as the morning crowds thin and the sea light softens. Your guide will introduce you to the city and orient you with a short walking overview before giving you free time to explore at your own pace.

Begin at the iconic sea-facing fortifications — a line of bronze cannons pointing out over the Atlantic, with sweeping views of the crashing waves, the fishing harbor, and the distant Mogador Island.
