Before reaching Essaouira, your first stop is a visit to a local women’s cooperative dedicated to the traditional extraction of Argan oil. This is not a tourist trap — it is a genuine working cooperative where local Berber women earn an independent income through a craft their families have practiced for generations.

What is Argan Oil?

Argan oil is extracted from the kernels of the Argan tree — a species that grows almost exclusively in southwestern Morocco. One of the rarest and most valuable oils in the world, prized for both culinary and cosmetic uses. The extraction process is entirely done by hand.

Watch the women crack the hard Argan nuts by hand with two stones. The kernels are then ground on a traditional stone mill and the oil pressed out by hand. You will have the opportunity to taste fresh culinary Argan oil and amlou — a traditional Moroccan paste of Argan oil, almonds, and honey — spread on fresh bread.
